Craving something sweet? Then our delicious chocolate fudge with goji berries will do the trick! It is a terrific superfood snack, rich in cacao power, goji berries and purple corn extract.

- 1 cup walnuts or pecan nuts
- ¼ cup cacao powder
- 1 tablespoon purple corn extract
- 1 tablespoon coconut oil or melted cacao butter
- Pinch of Himalayan salt
- ¾ cup soft, pitted dates
- ½ cup goji berries
- ½ cup almonds
Add the walnuts or peanuts to your food processor and blend until fine. Pour into a bowl. Add the cacao powder, purple corn extract, oil or butter and the pinch Himalayan salt and mix well. Add one date after another until the mixture begins to form and separate from the sides. Spoon into a plate and now take the goji berries and almonds and chop them roughly in the mixer. Add to the chocolate mixture and knead with clean hands. Then press it into a pan and cover with baking paper and leave to cool down in the fridge. Cut into blocks and enjoy! These also work well as a treat for when you’re on the road – wrapped in paper or tin foil.
