Banana bread - a delicious recipe using Maca
Ingredients
- 2 medium-sized ripe bananas (approximately 200-220 g without peel)
- ½ cup (120 ml) unsweetened almond milk
- 3 tablespoons (30 ml) melted coconut oil
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- ¼ cup (50 g) raw cane sugar or coconut sugar
- 1 cup (100 g) oatmeal
- ½ cup (60 g) buckwheat flour
- ½ cup (50 g) almond flour
- 1 tbsp (10 g) maca powder
- 1 tsp baking powder
- ½ teaspoon baking soda
- 1 tsp cinnamon
- Pinch of sea salt
- 2 tbsp slivered almonds
Instructions
- Preheat the oven to 180 C.
- Using a fork, mash the bananas in a large mixing bowl.
- Add almond milk, coconut oil, lemon juice, vanilla and sugar. Mix well.
- Add flours (oat, buckwheat and almond), Maca powder, baking powder and baking soda, cinnamon and salt. Mix well but do not over-mix.
- Line a 20 cm cake tin with baking paper. Spread the batter evenly in the baking tin. Sprinkle with slivered almonds.
- Bake 35-40 minutes, until the top is golden brown.
- Let cool in tin for 15 minutes, then remove and let cool completely on a cooling rack.
