Healthy crispy cocoa-rice snacks - using Superfoodies Cocoa Powder
Ingredients - for 9-12 bars, depending on size
- 3 cups (80 g) puffed rice
- ¼ cup raw Cocoa Powder
- Pinch of sea salt
- ¼ cup (60 g) peanut butter or nut spread
- 4 tbsp maple syrup
- 50 g cocoa butter
Instructions
- Combine the puffed rice, cocoa powder and sea salt in a large mixing bowl.
- Heat the peanut butter, maple syrup and cocoa butter in a small SS saucepan over low heat. Stir regularly.
- Pour the melted mixture into the bowl with the puffed rice and cocoa powder. Mix well, until the puffed rice is well coated and sticky.
- Put the sticky mixture in a brownie tin (20x20cm) lined with baking paper. Press in well.
- Place in the freezer for 1 hour to set. Remove from freezer and cut into bars or squares, and serve. Store in the refrigerator.
